Plant-Based Power Bowl
LEVEL: Easy
- 2 Handy Plant-Based Crabless Cakes
- 1/2 Cup Brown Rice
- 1/2 Cup Chickpeas
- 1/2 Cup Broccoli
- 1/2 Cup Cauliflower
- Lettuce
- Shredded Carrots
- Sliced Radish
- Dressing of your choice
Cook brown rice as directed (Instructions vary by brand)
Place rice in refrigerator to cool.
Preheat oven to 400 degrees F, spray or coat a baking pan with oil
Arrange broccoli and cauliflower on the baking pan and place in the oven. Cook for 15 minutes, or until the vegetables start to brown.
Remove vegetables from the pan and set aside to cool.
Bake, air fry, or deep fry 2 Handy Crabless cakes as directed, set aside.
Line a few leaves of the lettuce of your choice on the bottom of a bowl.
Add brown rice into the bowl, followed by the chickpeas (drained), then vegetables.
Top with a dressing of your choice, then add the crabless cakes, sliced radish, and carrots.
