Crab Cake and Broccoli Quiche

  •  (2) 3-ounce Handy Crab Cakes
  • 5 Large eggs
  • 1 Pie crust
  • 1 cup shredded cheddar cheese
  • 1 cup broccoli 
  • 1/3 cup of milk
  1. Coat a pie dish with oil, carefully unravel and place the pie in the dish.
  2. Crimp the edges of the crust around the dish.
  3. In a large bowl, whisk together the eggs and milk.
  4. Chop the broccoli and heat in the microwave until tender. Remove excess liquid. 
  5. Pour the egg mixture onto the pie crust.
  6. Add 1/2 cup of shredded cheddar cheese and all of the broccoli.
  7. Preheat the oven to 350 degrees F.
  8. Thaw the crab cakes in a microwave for 45 seconds on high.
  9. Gently disperse the thawed crab cakes evenly over the pie mixture.
  10. Top with the remaining shredded cheddar cheese.
  11. Bake for 20-30 minutes, or until the cheese is melted and the internal temperature reaches 165 degrees F.
  12. Top with Old Bay, and enjoy!
