Ingredients
  • 2 Tbsp. Butter
  • ½ Onion (Diced)
  • 1 tsp. Garlic (Minced)
  • 2 Tbsp. Flour
  • 2 Tbsp. Pernod (Anise Liquor)
  • 2 Cups Cream, Heavy
  • 5 oz. Baby Spinach
  • 16 oz. Shucked Oysters & Liquor
  • Dash Smoked Paprika/Nutmeg
  • To taste Salt/Black Pepper
  1. Melt butter over medium heat, until foaming subsides
  2. Add onion and sauté until softened - 5 minutes
  3. Add garlic and flour and sauté for one minute, then add Pernod (Anise Liquor)
  4. Add cream and simmer for 5 minutes until slightly thickened
  5. Add oysters and liquor and simmer for 3 minutes
  6. Add spinach and simmer for 2 minutes and turn off heat
  7. Add smoked paprika and nutmeg
  8. Adjust with salt & pepper and serve
