Nashville Hot Shrimp and Grits

Ingredients

1 Carton Handy Nashville Hot Shrimp

2 cups water

1/2 cup Quick grits

4 ounces cheddar cheese

2 TBSP  Butter

Preheat oven to 400°F.

In a saucepan slowly stir grits into boiling water.

Reduce heat to medium-low; cover.

Cook 4-5 minutes or until thickened, stirring occasionally.

Add cheese; Continue cooking until cheese melts, about 2-3 minutes.

Sprinkle with salt and pepper, keep warm.

Spray or coat the pan with oil.

Place shrimp on pan and place on rack in the middle of the oven.

Cook for 12-14 minutes, turn shrimp over once during cooking.

Spoon grits onto plate or bowl, top with shrimp and garnish with additional cheese and scallions.
