Ingredients
- 1 Box of Handy Shrimp Rolls
- Long grain brown or white rice (day-old and cold rice preferred)
- 1 Small white onion
- 1 Bag of frozen peas and carrots
- 2 Eggs
- Sesame oil
- Soy sauce
- Green onions
Shrimp Rolls
Prepare Shrimp Rolls per packaging instructions.
Fried Rice
- Preheat the skillet to medium-high heat and pour sesame oil into the bottom of the skillet
- Add the onion, peas, and carrots. Fry this until they are tender.
- Move the veggies to the side of the skillet. Pour the beaten eggs onto the opposite side. Use a spatula to scramble the eggs.
- Mix the scrambled eggs together with the veggies, and add rice.
- Pour the soy sauce and stir the mixture until it is heated throughout.
- Cut shrimp rolls in half and place them on top of the fried rice.
- Garnish with green onions and enjoy.
