Handy's Shrimp Birds' Nests

2 cups of hot water or dashi stock

2 tablespoons of miso paste (adjust to your taste)

1/2 block of silken or soft tofu, cut into 1/2-inch cubes

Optional garnishes: chopped green onions, a drizzle of sesame oil, or a pinch of togarashi (Japanese seven-spice powder)
- Prepare the Handy's Shrimp Birds Nest according to the package directions.
- While the shrimp birds nests are cooking, prepare the miso soup.
- Bring 2 cups of water to a boil in a small saucepan.
- Add the cubed tofu to the saucepan and let it warm through for a minute.
- Remove the saucepan from the heat. In a small bowl, scoop out a ladleful of the hot broth and mix it with the miso paste until a smooth slurry is formed. This prevents the miso from clumping in the soup.
- Stir the miso slurry back into the saucepan.
- Gently heat the soup over very low heat for about 1 minute, but do not let it boil.
- Ladle the soup into two bowls, garnish with sliced green onion, and serve immediately.
