Ingredients
  • Handy's Shrimp Birds' Nests

  • 2 cups of mixed salad greens (such as spring mix, romaine, or butter lettuce)

  • 1/2 cup of shredded carrots

  • 1/2 English cucumber, thinly sliced

For the Ginger Dressing:

  • 2 tablespoons of rice vinegar

  • 1 tablespoon of low-sodium soy sauce

  • 1 tablespoon of finely minced fresh ginger

  • 1 teaspoon of honey or agave nectar

  • 1/4 cup of olive oil or neutral oil (like grapeseed or canola)

  • 1/4 teaspoon of sesame oil

  • 1/4 cup of toasted sliced almonds or sesame seeds, for garnish

  1. Prepare the Handy's Shrimp Birds Nest according to the package directions.
  2. While the shrimp birds nests are cooking, prepare the dressing.
  3.  In a small bowl, whisk together the rice vinegar, soy sauce, minced ginger, honey, and sesame oil. While whisking continuously, slowly drizzle in the olive oil until the dressing is emulsified and creamy.
  4. In a large bowl, combine the salad greens, shredded carrots, and sliced cucumber.

  5. Just before serving, drizzle the desired amount of ginger dressing over the salad and toss gently to coat.

  6. Arrange the crispy Handy's Shrimp Birds Nest on a serving platter or plate, and serve the fresh ginger salad on the side. Garnish with toasted almonds or sesame seeds.
