Ingredients
  • Handy's Shrimp Birds' Nests

  • 2 cups of hot water or dashi stock

  • 2 tablespoons of miso paste (adjust to your taste)

  • 1/2 block of silken or soft tofu, cut into 1/2-inch cubes

  • Optional garnishes: chopped green onions, a drizzle of sesame oil, or a pinch of togarashi (Japanese seven-spice powder)

  1. Prepare the Handy's Shrimp Birds Nest according to the package directions.
  2. While the shrimp birds nests are cooking, prepare the miso soup.
  3. Bring 2 cups of water to a boil in a small saucepan.
  4. Add the cubed tofu to the saucepan and let it warm through for a minute.
  5. Remove the saucepan from the heat. In a small bowl, scoop out a ladleful of the hot broth and mix it with the miso paste until a smooth slurry is formed. This prevents the miso from clumping in the soup.
  6. Stir the miso slurry back into the saucepan.
  7. Gently heat the soup over very low heat for about 1 minute, but do not let it boil.
  8. Ladle the soup into two bowls, garnish with sliced green onion, and serve immediately.
