Oyster Rockefeller Soup

- 2 Tbsp. Butter
- ½ Onion (Diced)
- 1 tsp. Garlic (Minced)
- 2 Tbsp. Flour
- 2 Tbsp. Pernod (Anise Liquor)
- 2 Cups Cream, Heavy
- 5 oz. Baby Spinach
- 16 oz. Shucked Oysters & Liquor
- Dash Smoked Paprika/Nutmeg
- To taste Salt/Black Pepper
- Melt butter over medium heat, until foaming subsides
- Add onion and sauté until softened - 5 minutes
- Add garlic and flour and sauté for one minute, then add Pernod (Anise Liquor)
- Add cream and simmer for 5 minutes until slightly thickened
- Add oysters and liquor and simmer for 3 minutes
- Add spinach and simmer for 2 minutes and turn off heat
- Add smoked paprika and nutmeg
- Adjust with salt & pepper and serve
